Crunchy Fish Filets
4 portions
4 white fish fillets, rinsed and pat dry
4 tbspn. of honey dijon mustard
2 tbspn. of soy sauce (low sodium)
4 tspn. of lemon pepper
juice of one lemon
2 cups of corn flakes (plain)
cooking spray
Note: To prepare this recipe you will also need a basting brush, plastic bags with zipper, a rolling pin and a bowl.
Put the corn flakes inside a plastic bag, close and smash with the rolling pin until they become crumbs.
In a bowl mix the mustard, soy sauce, and lemon juice. Dip fish fillets in the mixture and place on the rack of a baking pan. Sprinkle both sides with lemon pepper. Spray each fillet with cooking spray and press the corn flake crumbs on the top. Bake at 425 degrees for approximately 10 minutes or until the crumbs look toasted. Do not overcook or the fish will dry up. Remove from the oven and serve immediately.

"Affogato"Coffee Ice Cream
10 portions
1 cup fat free condensed milk
1/2 cup fat free evaporated milk
4 tspn. of instant espresso coffee
1/2 container of whipped topping
8 oz fat free sour cream
1 tbspn of vanilla
1 tspn. of cinnamon
1 can of whipped topping
1 jar of cherries
Kahlua
In a large bowl mix the condensed milk with the cinnamon. Blend well. Add the evaporated milk, coffee, vanilla and sour cream to the mixture. Mix well and then, with a folding movement, blend in the whipped topping.
Freeze in a covered container.
To serve, put two scoops in an ice cream cup and pour 2 tbspn. of Kahlua on top. Add a touch of whipped topping (canned) and a cherry. Serve immediately.
